Overview

Mole sauce is a Mexican tradition that has been passed through the generations since pre- hispanic times. Its variants are endless, with moles of many colors and from many regions. Many variants have 20 ingredients or more. Once considered peasant food, the dish is now seen as an iconic representation of Mexican culture. The story of its origins was altered over time to fit the politics of the moment, and reflected the views of the larger society at the time. Loaded with seed, nuts, chiles, and other nutritious ingredients and served with meat and vegetables, mole is a tradition that continues to put healthy food on the table in Mexican households.
